ANGELA MISSONI'S TROPEA RECIPE
Ingredients:
4 onions
plum tomatoes
5 lbs of lobster
½ liter red wine vinegar
½ liter water
olive oil
salt to taste
Finely slice the onions. Place in a bowl filled with the red-wine vinegar and water. Let stand for 5 hours. Place the lobster in large pot of boiling water. Simmer for 20 minutes. Chop plum tomatoes into cubes. Season chopped tomatoes in large bowl with salt and olive oil. Add ¾ of the finely sliced onion to seasoned tomatoes. Remove meat from lobster and cut into bite-size chunks. Add chunks of lobster to the tomatoes and onions and toss. Add remaining ¼ of onions as gamish and serve immediately. Makes 4 servings.
